Ingredients
2 cup plain flour
1 1/2 teaspoon baking powder
3/4 cup caster sugar
125 gram unsalted butter, chilled
1 cup craisins (or sultanas)
1 lemon, zest of
1 orange, zest and juice of
2 eggs, lightly beaten
extra flour, for rolling
Method
1. Preheat oven to 180°C. Grease and line a baking sheet.
2. Sift together flour and baking powder. Stir through sugar.
3. Grate the butter into the flour mixture. Rub through until the mixture resembles breadcrumbs. Stir through craisins and zest.
4. Mix in the eggs and orange juice. Stir until mixture comes together.
5. Roll mixture into a log about 30cm long. Slice into 1 1/2cm pieces. (Alternatively, you can just blob 2 tablespoons worth of mixture onto the tray).
6. Place on prepared tray. Bake for 15-20 minutes or until lightly browned. Remove and cool on a rack.
