- 8 firm and ripe plums
- 185 gram soft goat's cheese
- 2 1/2 tablespoon icing sugar mixture, sifted
- 2 pieces preserved ginger in syrup, finely chopped
- 2 tablespoon maple syrup

Roasted plums with goat's cheese and preserved ginger
- 1Preheat oven to 190°C. Lightly grease a baking dish. Cut plums in half, then twist halves and remove stones. Hollow out each half slightly to accommodate filling and place, cut-side up, in prepared dish.
- 2Place cheese and icing sugar in a bowl. Whip with a fork until smooth. Stir in ginger. Spoon into plum cavities and cook in oven for 20 minutes, until golden.
- 3Remove from oven and spoon over maple syrup. Stand for 10 minutes before serving, or serve at room temperature.
