Roasted plums with goat's cheese and preserved ginger
  • 8 firm and ripe plums
  • 185 gram soft goat's cheese
  • 2 1/2 tablespoon icing sugar mixture, sifted
  • 2 pieces preserved ginger in syrup, finely chopped
  • 2 tablespoon maple syrup

Method

Roasted plums with goat's cheese and preserved ginger

    Preheat oven to 190°C. Lightly grease a baking dish. Cut plums in half, then twist halves and remove stones. Hollow out each half slightly to accommodate filling and place, cut-side up, in prepared dish.

    Place cheese and icing sugar in a bowl. Whip with a fork until smooth. Stir in ginger. Spoon into plum cavities and cook in oven for 20 minutes, until golden.

    Remove from oven and spoon over maple syrup. Stand for 10 minutes before serving, or serve at room temperature.
