Ingredients

Roast pumpkin and ginger mash
  • 1.5 kilogram pumpkin
  • 1 tablespoon vegetable oil
  • 100 gram butter, diced
  • 1/4 teaspoon sesame oil
  • 2 teaspoon japanese soy sauce
  • 2 centimetre piece fresh ginger (10g), grated

Method

Roast pumpkin and ginger mash

    Preheat oven to 220°C (200°C fan-forced).

    Seed and cut pumpkin into chunks. Place pumpkin, skin-side down, on oven tray; drizzle with vegetable oil. Roast 1 hour 20 minutes or until tender. Stand 10 minutes. Discard skin.

    Mash pumpkin with butter and sesame oil until smooth. Stir in sauce and ginger.
