Ingredients

Method

1.Preheat oven to moderate, 180°C. Line a large oven dish with baking paper.
2.Place potato in dish; spray with oil and bake 10 minutes. Add chicken; spray with oil, drizzle with lemon juice and sprinkle with garlic and oregano. Add pumpkin and onion; spray with oil and season to taste.
3.Bake 30-35 minutes. Add mushrooms and tomatoes; spray with oil and season to taste. Bake 10 minutes, until chicken is cooked through and vegies are tender.
4.Turn oven to grill function. Grill 5-10 minutes, until chicken and vegetables are golden. Serve sprinkled with oregano.
