Method

1.Preheat oven to 180°C. Lightly grease an 8-cup ovenproof dish.
2.Cook pasta following packet instructions. Drain and keep warm.
3.In a medium saucepan, melt butter on high. Saute bacon 2-3 minutes, until golden. Stir in flour and cook 1 minute. Remove from heat. Gradually mix in milk until smooth. Return to heat and cook, stirring, until mixture boils and thickens. Simmer 3 minutes. Stir in parmesan and season to taste.
4.In baking dish combine pasta, sauce, spinach and half ricotta. Mix well. Crumble remaining ricotta over the top.
5.Bake 25-30 minutes, until golden brown. Serve with salad.

Add blanched broccoli florets, asparagus or corn kernels, if desired.
