Starting with a layer of chocolate and an almond nougat-like layer and a rich chocolate topping with a hint of brandy, this almond chocolate slice is one for the grown ups. The darker and better quality the chocolate, the richer this chocolate almond slice will be. Gorgeous served with a piping hot espresso (but goes alright with a cup of tea if you’re not into coffee.

Method

1.Grease and line base and two long sides of a 20cm x 30cm lamington pan with baking paper.
2.Spread base of pan with melted chocolate. Refrigerate for 10 minutes or until set.
3.Beat egg whites in a clean small bowl with an electric mixer until soft peaks form; gradually add sugar, beating until dissolved between additions. Fold in nuts and flour; spread over chocolate base. Bake in a moderate oven for about 20 minutes or until firm; cool for 20 minutes.
4.For topping, beat butter, sugar, egg yolks and brandy in a small bowl with an electric mixer until sugar is dissolved; stir in chocolate.
5.Spread slice with topping, bake for further 15 minutes or until set; cool. Refrigerate until firm before cutting into squares.
