Red wine marinated sausages & herb salad rolls
  • 1 cup (250ml) red wine
  • 2 tablespoon brown sugar
  • 1 tablespoon red wine vinegar
  • 2 clove garlic, crushed
  • 4 fresh bay leaves
  • 1 tablespoon coriander seeds
  • 1 tablespoon cumin seeds
  • 6 thick beef sausages
  • 6 long rolls (780g), split lengthways
  • 30 gram butter, softened
  • 1 1/2 tablespoon english mustard
Herb salad
  • 2 green onions, sliced
  • 1/2 cup fresh flat-leaf parsley, torn
  • 1/2 cup fresh chervil leaves, torn
  • 2 teaspoon red wine vinegar
  • 2 teaspoon olive oil

    Combine wine, sugar, vinegar, garlic, bay leaves and seeds in a large shallow dish; season. Add sausages; toss to coat. Cover; refrigerate at least 3 hours or overnight.

    Remove sausages from marinade; discard marinade. Cook sausages on a heated grill plate (or grill or barbecue) over medium heat 10 minutes or until browned on both sides and cooked through.

    Meanwhile, make herb salad. Combine ingredients in a small bowl; season to taste.

    Spread rolls with butter and mustard; top with sausages and salad.


Use chipolatas and mini rolls as a meal for children or as finger food.
