Raspberry and orange cordial
Bright, fruity and packed with flavour, raspberry and orange cordial is a great base for a refreshing soft drink or used as a mixer for vodka or white rum.

Ingredients
Raspberry and orange cordial
- 600 gram frozen raspberries
- 2 teaspoon tartaric acid
- 1/2 cup (125ml) orange juice
- 1 1/2 cup (330g) caster sugar
- 1 cup (250ml) water
- 1 tablespoon finely grated orange rind
- 6 cup (1.5l) iced water or chilled sparkling mineral water
- 300 gram fresh raspberries
- 1/2 cup loosely packed fresh mint leaves
Method
Raspberry and orange cordial
- 1Place frozen raspberries, acid, juice, sugar and water in a medium saucepan; bring to the boil. Reduce heat and simmer uncovered for about 5 minutes or until reduced slightly. Stir in rind.
- 2Remove berry mixture from heat and strain into sterilised bottles. Seal immediately; refrigerate 3 hours or overnight.
- 3To serve, pour ⅓ cup cordial into a glass, top up with ⅔ cup iced water or chilled sparkling mineral water. Garnish with fresh raspberries and mint.
