Raspberry and orange cordial

Bright, fruity and packed with flavour, raspberry and orange cordial is a great base for a refreshing soft drink or used as a mixer for vodka or white rum.

Raspberry and orange cordial
  • 600 gram frozen raspberries
  • 2 teaspoon tartaric acid
  • 1/2 cup (125ml) orange juice
  • 1 1/2 cup (330g) caster sugar
  • 1 cup (250ml) water
  • 1 tablespoon finely grated orange rind
  • 6 cup (1.5l) iced water or chilled sparkling mineral water
  • 300 gram fresh raspberries
  • 1/2 cup loosely packed fresh mint leaves

    Place frozen raspberries, acid, juice, sugar and water in a medium saucepan; bring to the boil. Reduce heat and simmer uncovered for about 5 minutes or until reduced slightly. Stir in rind.

    Remove berry mixture from heat and strain into sterilised bottles. Seal immediately; refrigerate 3 hours or overnight.

    To serve, pour ⅓ cup cordial into a glass, top up with ⅔ cup iced water or chilled sparkling mineral water. Garnish with fresh raspberries and mint.
