Quinoa, chicken & parsley salad
  • 1/2 cup (100g) red or white quinoa
  • 1 cup (250ml) water
  • 1/3 cup (80ml) lemon juice
  • 1/4 cup (60ml) extra virgin olive oil
  • 250 gram cherry tomatoes, halved
  • 1 1/2 cup loosely packed fresh flat-leaf parsley leaves
  • 1 cup loosely packed fresh mint leaves
  • 3 green onions, thinly sliced lengthways
  • 1 1/2 cup (250g) shredded barbecued chicken

Method

    Place quinoa and the water in a small saucepan; bring to the boil. Reduce heat and simmer with lid on for 10 minutes or until water is absorbed and quinoa is tender. Remove from heat.

    Combine juice and oil in a large bowl; season. Add quinoa, tomato, herbs, onion and chicken. Toss gently to combine.
