Quick veal stroganoff

Quick veal stroganoff
  • 2 tablespoon plain flour
  • 2 teaspoon smoked paprika
  • 650 gram veal steaks, cut into strips
  • 75 gram butter
  • 1 onion, thinly sliced
  • 250 gram button mushrooms, thinly sliced
  • 2 tablespoon tomato paste
  • 1/2 cup beef stock
  • 2 teaspoon worcestershire sauce
  • 1/2 cup light sour cream
  • 1/4 cup chopped parsley
  • green beans, crusty bread, to serve

    In a shallow dish, combine flour and paprika. Add veal strips, tossing to coat.

    In a large frying pan, heat half butter on high. Brown veal in 2 batches for 2-3 minutes each. Set aside.

    In same pan, heat remaining butter on high. Saute onion for 2-3 minutes until tender. Add the mushrooms and cook for 3-4 minutes until golden and softened.

    Stir in tomato paste and cook for 1 minute. Return veal to pan with stock and Worcestershire sauce. mix in sour cream and simmer for 2-3 minutes.

    Scatter with parsley and serve with steamed green beans and crusty bread.


Reduce kilojoules of this dish by halving the amount butter and sour cream used.
