Quick roast pork with apple and sage onions

Nothing loves roasted pork more than apple and sage, except perhaps those at the dinner table. The beauty of this dish is that it can be on the table in just over 30 minutes.

Method

1.Preheat oven to 200°C (180°C fan-forced).
2.Heat half the oil in a medium flameproof baking dish on the stove top over high heat; cook pork until browned all over. Remove from heat. Combine mustard, parsley and honey in a small bowl; brush mustard mixture all over pork, season.
3.Place apple, onion and sage around pork in dish; drizzle with remaining oil. Transfer to oven; roast, uncovered, for 20 minutes or until pork is cooked through. Remove pork, apples, onion and sage from dish, cover with foil; stand 10 minutes.
4.Place dish over medium heat on stove top. Add flour; cook, stirring, until mixture thickens and bubbles. Gradually add stock; cook, stirring, until gravy boils and thickens slightly, season.
5.Meanwhile, boil, steam or microwave beans until tender; drain. Serve sliced pork with baked apples, onions and sage, gravy and beans.

A flameproof baking dish can be cast iron, a heavy-based roasting pan or a heatproof crockery dish. Use Golden Delicious apples – a crisp almost citrus-coloured apple – if you prefer. They have an excellent flavour and hold their shape during cooking.
