Quick creamy chicken and mushroom rigatoni

A creamy chicken and mushroom pasta is guaranteed to keep the family happy, and this easy recipe needs just five ingredients to get the dish on the table.

Quick creamy chicken and mushroom rigatoni
  • 375 gram rigatoni pasta
  • 2 chicken breast fillets, sliced
  • 200 gram button mushrooms, sliced
  • 300 millilitre thickened cream
  • 2 tablespoon wholegrain mustard

    Cook rigatoni in a large saucepan of boiling, salted water according to packet instructions. Drain and return to pan.

    Meanwhile, heat a little olive oil in a large frying pan on high. Cook chicken for 3-4 minutes, until browned. Remove chicken from the pan.

    Heat remaining oil in same frying pan on high. Sauté mushrooms for 3-4 minutes, until tender. Stir in cream, mustard and chicken.

    Bring to boil. Reduce heat and simmer for 4-5 minutes, until sauce thickens slightly. Season to taste.

    Toss sauce through pasta in saucepan. Serve rigatoni with parsley leaves, parmesan cheese and a green salad, if liked.
