Quick chow mein noodles

Thick, chewy udon noodles add bulk and deliciousness to this flavour-packed recipe. Throw in some beef mince and frozen vegetables for a great all-rounder. The family will be going back for seconds!

Quick chow mein noodles
  • 400 gram packet udon noodles
  • 1/4 cup oyster sauce
  • 2 tablespoon soy sauce
  • 2 teaspoon brown sugar
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 2 teaspoon grated fresh ginger
  • 2 clove garlic, crushed
  • 500 gram minced beef
  • 450 gram packet frozen stir-fry vegetables, defrosted
  • 3 cup shredded wombok
  • 4 green onions, thinly sliced, green ends reserved, to garnish


Quick chow mein noodles

    Place noodles in a large heatproof bowl. Cover with boiling water. Soak for 1 minute, then gently separate with a fork. Drain well.

    In a small bowl, combine sauces and sugar. Set aside.

    In a wok, heat oil on high. Stir-fry onion for 3 minutes. Mix in ginger and garlic and cook for 30 seconds. Add beef and cook for 5 minutes, breaking up any lumps.

    Add vegetables and sauce mixture and stir-fry for 3-4 minutes until heated through and sauce is reduced. Toss wombok, green onion and noodles through, to heat.

    Serve noodles tossed with extra shredded green onion.
