Prawn cocktails

Juicy prawns with a dressing instead of mayo - it never fails to please.

Ingredients

Prawn cocktails
  • 400 gram cooked prawns, peeled, deveined, tails on
  • 1/4 watermelon, peeled, chopped
  • 1/4 honeydew melon, peeled, seeded, chopped
  • 100 gram crumbled feta
  • 1/2 red onion, thinly sliced
  • 1/2 bunch mint, leaves picked
Dressing
  • 1/4 cup olive oil
  • 2 tablespoon red-wine vinegar
  • 1 teaspoon dijon mustard

Method

Prawn cocktails

    In a large bowl, combine prawns, melons, feta, onion and mint.

    In a jug, whisk oil vinegar and mustard together. Season to taste.

    Layer salad ingredients among 4 serving glasses or bowls. Drizzle dressing over salads just before serving. Serve with forks.
