Ingredients

Prawn and soba noodle salad
  • 270 gram dried soba noodles
  • 20 uncooked medium king prawns (shrimp) (900g)
  • 1 carrot (120g), cut into matchsticks
  • 1 daikon (400g), cut into matchsticks
  • 2 green onions, sliced thinly
  • 1 fresh long red chilli, sliced thinly
  • 1/2 sheet toasted seaweed (yaki-nori), shredded finely
Soy dressing
  • 2 tablespoon rice vinegar
  • 2 tablespoon water
  • 1 tablespoon japanese soy sauce
  • 1/2 teaspoon sugar

Method

Prawn and soba noodle salad

    Cook noodles in medium saucepan of boiling water until tender; drain. Rinse under cold water; drain.

    Meanwhile, to make soy dressing, place ingredients in screw-top jar; shake well.

    Shell and devein prawns; halve lengthways. Cook prawns in medium saucepan of boiling water, uncovered, until changed in colour. Drain; cool.

    Place noodles, prawns and dressing in large bowl with carrot, daikon, onion and chilli. Serve salad sprinkled with seaweed.
