Ingredients

Prawn and basil bruschetta
  • 1 loaf ciabatta (440g)
  • 1/4 cup (60ml) olive oil
  • 750 gram peeled cooked medium king prawns, halved lengthways
  • 1/3 cup finely shredded fresh basil
  • 1/2 cup (150g) mayonnaise
  • 1 teaspoon finely grated lemon rind
  • 1 tablespoon lemon juice
  • 50 gram baby rocket leaves

Method

    Trim and discard ends from bread. Cut remaining bread into 18 slices; brush with oil both sides. Cook on heated oiled grill plate (or grill or barbecue) until bread is browned both sides.

    Combine prawns, basil, mayonnaise, rind and juice in medium bowl.

    Top toast pieces with rocket then prawn mixture.
