Prawn and avocado sliders

These quick prawn sliders with creamy aioli and fresh avocado slices make a perfectly healthy lunch. Or, serve them up as an easy finger food snack at your next party for a canape that's sure to please.

Prawn and avocado sliders
  • 500 gram cooked medium prawns, peeled, deveined
  • 1/4 cup aioli
  • 8 small bread rolls, split
  • 50 gram snow pea sprouts, trimmed
  • 1 avocado, seeded, thinly sliced
  • 1 lebanese cucumber, sliced into ribbons
  • lemon cheeks, to serve

    Slice prawns through centre. In a bowl, combine prawns and aioli. Preheat a chargrill pan on high.

    Grill rolls cut side down for 1 minute until grill marks appear. Fill with sprouts, avocado, cucumber and prawn mixture. Serve with lemon cheeks.


For speed, buy prawns already peeled and deveined.
