Method

1.Preheat oven to 220°C (200°C fan-forced). Oil four 250ml shallow baking dishes.
2.Cook potato until almost tender; drain.
3.Heat butter and oil in a large frying pan. Add potato and cook, stirring, about 10 minutes or until browned lightly. Add shallot; cook until softened. Transfer mixture to a medium bowl and coarsely crush potato mixture with fork.
4.Stir tuna, spinach, milk, ½ cup of the cheese and the tomatoes into potato mixture. Divide mixture among dishes; sprinkle with remaining cheese. Bake about 10 minutes or until browned.
