We grilled chicken thighs in a Portuguese-inspired spice mix of chilli, paprika, garlic and oregano for a flavour hit you can't beat!

Portugese-style chicken thighs
- 2 teaspoon cracked black pepper
- 1 teaspoon dried oregano
- 2 fresh small red thai chillies, chopped finely
- 1/2 teaspoon hot paprika
- 1 clove garlic, crushed
- 1/4 cup (60ml) red wine vinegar
- 1/4 cup (60ml) olive oil
- 6 (660g) thigh fillets, halved
Method
Portugese-style chicken thighs
- 1Combine pepper, dried oregano, chilli, paprika, garlic, vinegar and oil in medium bowl. Reserve about a quarter of the spicy mixture in small jug, use hands to rub remaining spicy mixture onto chicken pieces.
- 2Cook chicken on heated oiled grill plate (or grill or barbecue) until browned all over and cooked through.
- 3Serve chicken drizzled with reserved spicy mixture.
