Portuguese-style chicken thighs

We grilled chicken thighs in a Portuguese-inspired spice mix of chilli, paprika, garlic and oregano for a flavour hit you can't beat!

Portugese-style chicken thighs
  • 2 teaspoon cracked black pepper
  • 1 teaspoon dried oregano
  • 2 fresh small red thai chillies, chopped finely
  • 1/2 teaspoon hot paprika
  • 1 clove garlic, crushed
  • 1/4 cup (60ml) red wine vinegar
  • 1/4 cup (60ml) olive oil
  • 6 (660g) thigh fillets, halved

    Combine pepper, dried oregano, chilli, paprika, garlic, vinegar and oil in medium bowl. Reserve about a quarter of the spicy mixture in small jug, use hands to rub remaining spicy mixture onto chicken pieces.

    Cook chicken on heated oiled grill plate (or grill or barbecue) until browned all over and cooked through.

    Serve chicken drizzled with reserved spicy mixture.
