Pork silverside roast with maple-roasted vegies

  • 1.2 kilogram pork silverside roast
  • 1 tablespoon olive oil
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 large kumara (orange sweet potato) (500g), peeled, chopped coarsely
  • 600 gram pumpkin, peeled, chopped coarsely
  • 1 cup (250ml) pure maple syrup
  • 2/3 cup (160ml) barbecue sauce

    Preheat barbecue (or grill pan or grill plate).

    Brush pork with oil, season, place on heated grill plate, cook, turning, until browned all over. Remove from barbecue, place in a disposable aluminium baking dish.

    Combine cinnamon, ginger, vegetables, syrup and sauce in a large bowl, season. Place vegetable mixture around pork in the baking dish, brush pork with a little of the sauce.

    Cook pork and vegetables, covered, using indirect heat, for 1 and 1/4 hours. Stand pork, covered loosely with foil, for 10 minutes before slicing thickly.

    Serve pork with maple-roasted vegetables.
