Pork sausage bake with rigatoni

While preparing this deliciously simple sausage pasta bake, cook up a few extra sausages. You can turn them into these tasty sausage sandwiches with bacon chutney for lunch the next day - easy!

Pork sausage bake with rigatoni
  • 1 tablespoon olive oil
  • 12 pork sausages
  • 60 gram butter
  • 1/4 cup plain flour
  • 2 cup milk
  • 3/4 cup thickened cream
  • 500 gram rigatoni, cooked, drained
  • 3/4 cup grated tasty cheese
  • 2 large zucchini, halved, sliced
  • 3/4 cup sliced chargrilled capsicum
  • 75 gram soft feta
  • chopped parsley, to serve

    Preheat oven to 180°C. Lightly grease a 12-cup baking dish.

    In a large frying pan, heat oil on medium. Cook sausages for 4-5 minutes, turning. Cut into 1.5cm slices. If making extra for lunch, set aside four sausages.

    In a saucepan, melt butter on medium. Add flour and cook, stirring, for 1 minute. Stir in milk and cream. Cook, stirring, until sauce boils.

    In baking dish, toss pasta, sausage, sauce, cheese, zucchini and ½ cup capsicum. Top with feta.

    Bake for 20-25 minutes until golden. Serve sprinkled with parsley.
