Pork meatball curry
This is a super quick dinner and a great one for lifting spirits mid-week, with tender pork meatballs in a mild curry sauce and just-cooked green beans.

- 600 gram minced pork
- 2 tablespoon mild curry paste
- 6 medium (900g) tomatoes, chopped coarsely
- 150 gram green beans, trimmed, halved
Method
Pork meatball curry
- 1Season pork well with plenty of salt and freshly ground black pepper. Roll level tablespoons of pork into 24 balls. Heat oiled large saucepan over medium heat. Cook meatballs about 5 minutes or until browned all over. Remove from pan.
- 2Add curry paste; cook, stirring, until fragrant. Add tomato and 1/3 cup (80ml) cold water; bring to the boil. Simmer, uncovered, stirring occasionally, about 5 minutes or until sauce is thickened slightly
- 3Return meatballs to pan with beans. Simmer, covered, about 10 minutes or until beans are tender. Season to taste.
