Pork fillet mignon
  • 12 fresh sage leaves
  • 4 slice prosciutto (60g)
  • 4 x 250g pork fillets

    Place three sage leaves along each slice of prosciutto. Wrap one slice of prosciutto around each pork fillet; tie with kitchen string to secure.

    Heat a covered barbecue. Cook pork on an oiled barbecue flat plate, turning until browned all over. Cook pork, covered, using indirect heat, following manufacturer's instructions, for 35 minutes or until cooked as desired.

    Remove from heat, cover; stand 5 minutes before slicing.
