Plum sauce with roasted chicken wings

Ingredients

Plum sauce
  • 500 gram whole plums, quartered stones removed
  • 1/2 cup (125ml) while vinegar
  • 1/4 cup (60ml) water
  • 4 cloves garlic, chopped
  • 4 pieces ginger, chopped
  • 1/2 medium brown onion, chopped
  • 1 teaspoon salt
  • 2 fresh small red chillies, seeded, chopped finely
  • 3 star anise
  • 1 stick cassia bark or cinnamon
  • 1/3 cup (75g) caster sugar
Roasted chicken wings
  • 2 kilogram chicken wings
  • 1/3 cup dark soy sauce
  • 1/3 cup honey
  • 2 tablespoon vegetable oil
  • 6 clove garlic, crushed

Method

Plum sauce

    Combine all ingredients in a medium saucepan and bring to a boil. Reduce heat and simmer for 15 minutes or until plums, garlic, ginger and onion have softened completely.

    Remove star anise and cinnamon or cassia and push mixture through a coarse sieve.
Roasted chicken wings
  • 3
    Preheat oven to 200°C (180°C fan-forced). Remove the tips from chicken wings. Halve the wings into drumettes or wingettes. Marinate chicken in dark soy sauce, honey, tablespoons vegetable oil and garlic. Roast in oven for 20 minutes or until browned.

    Serve chicken wings with plum sauce.
