Pineapple and ginger mojitos

Ring in the New Year with this fresh cocktail. It's got everything you know and love in a mojito (think rum, mint and lime), with the added kick of fresh pineapple juice and ginger beer - yum!

Ingredients

Pineapple and ginger mojitos
  • 8 fresh pineapple wedges
  • 1/4 cup brown sugar
  • 2 cup mint leaves, plus extra mint sprigs to serve
  • 4 limes, wedges, plus slices to serve
  • crushed ice
  • 2 cup rum
  • 4 cup pineapple juice
  • 4 cup ginger beer

Method

    Coat pineapple wedges in sugar. Cook in a hot frying pan for 3 minutes each side on high until caramelised. Cool.

    Meanwhile, divide mint leaves and lime wedges between 8 tall glasses. Using a cocktail muddler or a rolling pin, pound limes and mint leaves until juice and flavour is released.

    Fill glasses 2/3 full with crushed ice. Add ¼ cup rum to each glass, top up with ½ cup each pineapple juice and ginger beer. Serve with pineapple wedges, mint sprigs and lime slices.
