Ingredients

Pesto zucchini pasta
  • 200 gram woolworths select large pasta shells
  • 1 tablespoon olive oil
  • 2 zucchini, sliced into ribbons
  • 100 gram feta, crumbled
  • finely grated zest of 1 lemon
  • 1/4 cup mint leaves, plus extra to serve

  • 1 cup mint leaves, plus extra to serve
  • 1/3 cup woolworths select blanched almonds, roasted
  • 1/3 cup olive oil
  • 1/4 gram grated parmesan
  • 1 clove garlic, peeled

Method

Pesto zucchini pasta
  • 1
    Cook pasta following the packet instructions; drain. Return to pan and cover to keep warm.

    Make pesto: process all the ingredients until finely chopped.

    Heat oil in a large frying pan on high. Sauté zucchini for 1-2 minutes until tender. Set aside.

    Toss zucchini, pesto, feta, zest and mint through. Serve with mint leaves.
