Peppermint choc-chip ice-cream blocks
  • 2 cup (500ml) softened vanilla ice-cream
  • 1/2 teaspoon peppermint essence
  • green food colouring
  • 3/4 cup (75g) coarsely grated dark eating chocolate

Method

    Place ice-cream in small bowl; stir in essence, a drop of green food colouring and chocolate.

    Spoon mixture into six ¼-cup (60ml) ice-block moulds.

    Press lids on firmly; freeze 6 hours or overnight.
