Pear and date crumble with honey oat topping
- 3 medium (690g) firm pears
- 1/4 cup (60ml) water
- 1 strip lemon rind
- 3 fresh dates (70g), seeded, chopped
- 2/3 cup (100g) wholemeal self-raising flour
- 1/4 cup (20g) rolled oats
- 60 gram reduced-fat spread
- 2 tablespoon yellow box honey
- 1/2 teaspoon ground ginger
- 1 teaspoon ground cinnamon
Method
Pear and date crumble with honey oat topping
- 1Preheat oven to moderate (180°C/160°C fan-forced). Grease a shallow 1 litre (4 cup) ovenproof dish.
- 2Peel, core and slice pears. Combine pears, the water and rind in a large pan; cook, uncovered, for about 10 minutes or until pears are just tender. Remove from heat; discard rind, stir in dates.
- 3Meanwhile, sift flour into a small bowl, stir in oats. Rub in and spread with fingertips; then stir in honey and spices.
- 4Place pear mixture in prepared dish and sprinkle with crumble mixture. Bake for about 30 minutes or until browned lightly.
Notes
Not suitable to freeze. Pear mixture suitable to microwave.
