Ingredients

Pear and almond friands
  • 6 egg whites
  • 185 gram butter, melted
  • 1 cup (120g) almond meal
  • 1 1/2 cup (240g) icing sugar
  • 3/4 cup (110g) plain flour
  • 1 small_piece pear (180g), peeled, cored, chopped finely
  • 1/4 cup (20g) flaked almonds

Method

    Preheat oven to 200°C (180°C fan-forced). Grease 12-hole (¹/³-cup/80ml) muffin pan.

    Place egg whites in medium bowl, beat with a fork. Stir in butter, almond meal, sifted icing sugar and flour, then pear.

    Pour ¼-cups of mixture into pan holes, sprinkle with nuts.

    Bake friands about 20 minutes. Stand friands in pan 5 minutes, turn, top-side up, onto wire rack to cool.

Notes

Friands are not meant to be light and airy, so the last thing you want to do is whisk air into the mixture.
