Peach friands with orange mascarpone frosting
- 185 gram butter
- 6 egg whites
- 1 cup (120g) ground almonds
- 1 1/2 cup (240g) icing (confectioners') sugar
- 1/2 cup (75g) plain (all-purpose) flour
- 1 tablespoon orange-flavoured liqueur
- 1 teaspoon orange rind, finely grated
- 2/3 cup (170g) glacé peaches, finely chopped
Orange marscapone frosting
- 1/2 cup (125ml) thickened (heavy) cream
- 2 tablespoon icing (confectioners') sugar, sifted
- 1 tablespoon orange-flavoured liqueur
- 1/4 cup (125g) mascarpone cheese
Method
Peach friands with orange mascarpone frosting
- 1Preheat oven to 200°C (180°C fan forced). Grease 12-hole (½-cup/125ml) oval friand pan with butter.
- 2Melt butter, cool. Place egg whites in large bowl, whisk lightly with a fork. Add butter, ground almonds, sifted icing sugar and flour, liqueur, rind and peaches, stir until combined.
- 3Divide mixture into pan holes. Bake friands about 20 minutes. Turn friands, top-side up, onto wire rack to cool.
- 4To make orange marscapone frosting. Beat cream, sifted icing sugar and liqueur in small bowl with electric mixer until soft peaks form. Fold in mascarpone.
- 5Spread frosting over friands, topped with extra thinly sliced glacé peach.
Notes
storage Friands will keep in an airtight container in the refrigerator for 2 days, or in the freezer (without frosting) for 2 months.
