Peach and hazelnut friands
- 6 egg whites
- 185 gram butter, melted
- 1 cup (110g) hazelnut meal
- 1 1/2 cup (240g) icing sugar
- 1/2 cup (75g) plain flour
- 2 medium (300g) peaches, sliced thinly
Method
Peach and hazelnut friands
- 1Preheat the oven to 200°C (180°C fan-forced). Grease 12 (1/2-cup/125ml) rectangular or oval friand pans; place on an oven tray.
- 2Place egg whites in a medium bowl; beat lightly with a fork. Stir in butter, hazelnut meal, sifted icing sugar and flour. Spoon mixture into pans; top with peach slices.
- 3Bake friands for about 25 minutes or until cooked when tested. Stand friands in pans for 5 minutes; turn, top-side up, onto wire rack to cool.
