Peach and hazelnut friands

Peach and hazelnut friands
  • 6 egg whites
  • 185 gram butter, melted
  • 1 cup (110g) hazelnut meal
  • 1 1/2 cup (240g) icing sugar
  • 1/2 cup (75g) plain flour
  • 2 medium (300g) peaches, sliced thinly

    Preheat the oven to 200°C (180°C fan-forced). Grease 12 (1/2-cup/125ml) rectangular or oval friand pans; place on an oven tray.

    Place egg whites in a medium bowl; beat lightly with a fork. Stir in butter, hazelnut meal, sifted icing sugar and flour. Spoon mixture into pans; top with peach slices.

    Bake friands for about 25 minutes or until cooked when tested. Stand friands in pans for 5 minutes; turn, top-side up, onto wire rack to cool.
