Pea fritters with avocado goat’s cheese

Pea fritters with avocado goat’s cheese
- 1/2 cup (75g) wholemeal self-raising flour
- 1 teaspoon finely grated lemon rind
- 1 small egg
- 1/2 cup (125ml) skim milk
- 1 cup (120g) frozen peas, thawed
- 1 teaspoon rice bran oil
- 1 small avocado (200g)
- 30 gram fresh goat’s cheese, crumbled
- 2 tablespoon chopped fresh mint leaves
- 30 gram rocket leaves (arugula)
- 80 gram chopped cherry tomatoes, quartered
- 2 lemon wedges
Method
Pea fritters with avocado goat’s cheese
- 1Combine sifted flour and rind in a medium bowl. Add egg and milk, whisk to combine. Fold through peas. Season with pepper.
- 2Heat oil in a large, non-stick frying pan over medium heat; cook ⅓-cups of batter, in batches, for 3 minutes each side or until browned lightly and cooked through. Cover to keep warm.
- 3Meanwhile, mash avocado in a small bowl with a fork. Stir through cheese and mint. Serve fritters with avocado mash, rocket, tomato and wedges.
Notes
Thaw peas by running under boiling water. The mixture is quite loose, it will spread once in the pan.
