Ingredients

Pea, broad bean, mint and feta fritters
  • 1 cup frozen peas, blanched
  • 1 cup frozen broad beans, blanched and skins removed
  • 200 gram feta, broken into pieces
  • 1 cup mint, shredded
  • 2 lemons, zest
  • 2 cloves garlic, finely sliced
  • 3 eggs, whisked
  • 1/4 cup flour
  • 1/4 cup beer
  • 2 tablespoon butter
  • 2 tablespoon olive oil

Method

    Mix all ingredients together in a large bowl, except butter and oil.

    Heat butter and oil in a non-stick frying pan and cook ¼ cup amounts of batter until golden on both sides.

    Season to taste and serve hot with a salad.
