Ingredients
500 gram casarecce or spiral pasta
1 cup (250ml) fish stock
300 millilitre cream
200 gram smoked salmon off-cuts or strips, chopped coarsely
4 green onions, sliced thinly
2 tablespoon finely chopped fresh dill
1 teaspoon finely grated lemon rind
2 tablespoon lemon juice, optional
Method
1. Cook pasta in large saucepan of boiling water, uncovered, until just tender; drain.
2. Meanwhile, place stock and cream in medium saucepan; bring to a boil. Reduce heat; simmer, uncovered, about 5 minutes or until thickened slightly.
3. Combine pasta with salmon, onion, dill, rind and cream mixture in large bowl; add juice and season to taste with freshly ground black pepper.
This recipe is best made just before serving. SERVING SUGGESTION Serve with a green salad, if desired.
