Pasta with garlic squash

Quick, tasty and packed full of flavour, this beautiful pasta dish is wonderful tossed with tender garlic infused squash and crispy bacon pieces. Serve with crusty bread for a satisfying weeknight dinner.

Pasta with garlic squash
  • 300 gram spaghettini
  • 2 tablespoon extra virgin olive oil
  • 4 rashers rindless bacon, diced
  • 8 patty pan squash, cut into wedges
  • 3 clove garlic, sliced
  • 1/2 cup coarsely chopped parsley
  • 3/4 cup (60g) grated parmesan
  • crusty bread, to serve

    Cook spaghettini in a large saucepan of boiling, salted water according to packet directions. Drain.

    Meanwhile, heat oil in a large frying pan on high. Add bacon. Cook 2-3 minutes, until brown. Reduce heat to medium, toss through squash and garlic. Cook 6 minutes, until squash is golden and just tender.

    Add spaghettini, parsley and 1/4 cup parmesan to pan. Toss together 2 minutes, until spaghettini warms through. Top with remaining parmesan. Serve with crusty bread.
