Parsnip mash

Ingredients

Parsnip mash
  • 1 kilogram (2 pounds) coarsely chopped peeled parsnips
  • 40 gram (1½ ounces) butter
  • 1 crushed garlic clove
  • 3/4 cup hot pouring cream
  • 1 tablespoon torn parsley leaves
  • cracked black pepper

Method

Parsnip mash

    Boil, steam or microwave parsnips until tender; drain. Mash parsnip with butter, garlic and cream.

    To serve, sprinkle with parsley leaves and cracked black pepper to taste.
