The classic stir-fried noodle dish means "soy sauce stir fried noodles" and next to pad Thai is one of the most popular Thai takeaway dishes.

  • 375 gram packet rice stick noodles
  • 2 tablespoon peanut oil
  • 750 grams beef stir-fry strips
  • 2 eggs, whisked
  • 1 bunch Chinese broccoli gai lan) or broccolini, halved
  • 1 onion, thinly sliced
  • bean sprouts, sliced chilli, chopped peanuts, to serve
  • ½ cup crunchy peanut butter
  • ½ cup warm water
  • 2 tablespoon kecap manis
  • 1 tablespoon oyster sauce
  • 1 tablespoon light soy sauce
  • 1 tablespoon sambal oelek

    Place noodles in heatproof bowl and cover with hot water. Soak until they soften, gently separating. Drain well and set aside.

    In a wok or large frying pan, heat half oil on high. Stir-fry beef in two batches, 3-4 minutes each, until well browned. Set aside.

    Pour egg into wok. Swirl to coat base. Fry 1-2 minutes until golden. Slide from wok and slice. Set aside.

    Heat remaining oil in wok. Stir-fry broccoli and onion 2-3 minutes until just tender.

    In a large jug, mix all ingredients together until smooth.

    Return beef and egg to wok. Add sauce mixture. Bring to simmer and cook 2 minutes.

    Add noodles and cook 2-3 minutes, tossing well. Serve topped with bean sprouts, sliced chilli and peanuts.
