Oysters with two dressings
  • 24 freshly shucked oysters
  • 2 tablespoon rice wine vinegar
  • 2 tablespoon japanese soy sauce
  • 2 teaspoon white sugar
  • 1/2 teaspoon wasabi paste
  • 1 green onion, sliced thinly
  • 1/2 (45g) tomato, seeded, chopped finely
  • 1 tablespoon red wine vinegar
  • 2 teaspoon extra virgin olive oil
  • 1 tablespoon finely chopped fresh chives

    To make wasabi soy dressing, combine vinegar, sauce, sugar and paste in small saucepan. Heat gently, stirring, until sugar dissolves. Bring to the boil; simmer 1 minute. Cool; stir in onion. Spoon a little of the mixture over 12 oysters.

    To make tomato chive dressing, combine ingredients in small bowl. Spoon a little of the mixture over each remaining oyster.
