Oysters with red wine vinaigrette

Oysters with red wine vinaigrette


  • 12 tasmanian oysters
  • 1/4 cup red wine vinegar
  • 3 eschallots, finely diced
  • 3/4 cup olive oil
  • salt and pepper

    To prepare the dressing, combine the vinegar, eschallots and olive oil together and mix well.

    Place oysters onto serving plate. Season the dressing with salt and pepper, and spoon over oysters. Serve immediately.
