Oysters with pickled lemon

Oysters always make a wonderful starter or shared platter for parties, try serving up half natural and half dressed with our pickled lemon dressing.

Oysters with pickled lemon
  • 1 lemon
  • 2 tablespoon white wine vinegar
  • 2 tablespoon olive oil
  • 2 shallots, chopped finely
  • 2 tablespoon finely chopped chives
  • 24 rock oysters, on the half shell

    Halve lemon lengthways, cut each half into 1cm wedges, slice thinly crossways.

    Combine lemon, vinegar, oil, shallot and chives in small bowl; stand 10 minutes.

    Top oysters with pickled lemon mixture. Serve immediately.
