Oysters with lime and coriander

Bright, light and fresh, these lime and coriander oysters make a great starter or shared platter for a party.

Oysters with lime and coriander
  • 24 oysters, on the half shell
  • 1/4 cup (60ml) lime juice
  • 1 teaspoon tabasco sauce
  • 2 tablespoon coarsely chopped fresh coriander
  • 2 green onions, sliced thinly
  • 1 tablespoon peanut oil
  • 1 clove garlic, crushed
  • 1 teaspoon brown sugar

    Carefully remove oysters from shells; wash and dry shells. Return oysters to shells; place, in single layer, on serving platter.

    Place remaining ingredients in screw-top jar; shake well. Divide dressing among oysters.


Dressing can be made a day ahead. Refrigerate until required.
