Orange raspberry loaf
- 310 gram packet madeira cake mix
- 2 eggs
- 3/4 cup milk
- 2 teaspoon grated orange rind
- 150 gram frozen raspberries
Method
Orange raspberry loaf
- 1Preheat oven to 180ºC (160ºC fan-forced). Grease a 12cm x 22cm loaf pan; line base and long sides with baking paper, extending paper 5cm over sides.
- 2Combine cake mix, eggs, milk and orange rind in medium bowl. Beat on low speed with electric mixer until ingredients are combined. Increase speed to medium; beat 3 minutes. Stir in frozen raspberries. Pour mixture into pan; bake about 55 minutes.
- 3Stand cake in pan 10 minutes before turning, top-side up, onto wire rack to cool.
