Orange raspberry loaf
  • 310 gram packet madeira cake mix
  • 2 eggs
  • 3/4 cup milk
  • 2 teaspoon grated orange rind
  • 150 gram frozen raspberries

    Preheat oven to 180ºC (160ºC fan-forced). Grease a 12cm x 22cm loaf pan; line base and long sides with baking paper, extending paper 5cm over sides.

    Combine cake mix, eggs, milk and orange rind in medium bowl. Beat on low speed with electric mixer until ingredients are combined. Increase speed to medium; beat 3 minutes. Stir in frozen raspberries. Pour mixture into pan; bake about 55 minutes.

    Stand cake in pan 10 minutes before turning, top-side up, onto wire rack to cool.
