1.Beat butter, rind, sugar and egg in medium bowl with electric mixer until smooth.Stir in coconut, sifted flour and juice.
2.Roll rounded teaspoons of mixture into balls, press 1 side of balls lightly in mixed peel. Place balls, peel side up, about 4cm apart, on greased oven trays.
3.Bake in moderate oven about 15 minutes or until lightly browned. Cool on trays.
