Orange and poppy seed friands

Orange and poppy seeds is a classic combination for friands, you can liven it up by using mandarin instead.

Orange and poppy seed friands
  • 1/2 cup (75g) plain flour
  • 1 1/2 cup (240g) soft icing sugar mixture or, icing sugar, sifted
  • 1 cup (125g) almond meal
  • 2 tablespoon poppy seeds
  • 1 orange, zested
  • 6 egg-whites, lightly beaten
  • 150 gram melted butter, cooled
  • 1 1/2 tablespoon marmalade, optional

    Preheat oven to 180°C (160°C fan-forced). Lightly grease 12 friand moulds.

    Sift flour and icing sugar into large mixing bowl. Stir in almond meal, poppy seeds and orange rind. Stir in egg-whites and melted butter.

    Divide mixture among prepared pans. Top each with 1/2 tsp marmalade, if desired.

    Bake in 25 minutes until cooked through and golden brown (when a skewer is inserted into centre, it should come out clean).
