One-pan sausage bake
  • 8 thick beef sausages (1.2kg)
  • 2 medium yellow capsicums (bell peppers), (400g), sliced thickly
  • 375 gram cherry tomatoes
  • 1 small red onion (100g), cut into wedges

    Preheat oven to 200°C.

    Heat large flameproof baking dish over high heat. Cook sausages until browned all over. Add capsicum, tomatoes and onion, season.

    Roast, uncovered, about 30 minutes or until sausages are cooked through and the vegetables are tender.
