One−pot poached chicken with soba noodles

One−pot poached chicken with soba noodles
  • 3 cup (750ml) water
  • 20 gram piece fresh ginger, peeled, sliced thinly
  • 100 gram chicken breast fillet
  • 30 gram soba noodles
  • 1/4 cup (50g) frozen shelled green soya beans (edamame)
  • 80 gram rainbow chard leaves, chopped coarsely
  • green onion, sliced thinly diagonally
  • 1 tablespoon light soy sauce
  • 1 teaspoon honey
  • 3 teaspoon lime juice
  • 1/2 clove garlic, crushed

    Fill a medium saucepan with the water, add ginger, bring to the boil; reduce heat to low. Add chicken to pan; simmer for 10 minutes or until chicken is cooked through. Remove chicken and ginger from pan; discard ginger, reserve poaching liquid.

    Return poaching liquid to the boil. Add noodles; cook for 3 minutes. Add beans and chard to pan; cook for 1 minute. Drain; return noodle mixture to pan.

    Shred chicken; add to noodle mixture with onion.

    Combine sauce, honey, juice and garlic in a small bowl; drizzle over noodle mixture to serve.


You can use silver beet or spinach if you are unable to get rainbow chard.
