No need to spend hours on this fruit and nut tart; it takes just 45 minutes and with juicy nectarine and apricot slices will have you coming back for more.
1.Beat butter and sugar in a small bowl with an electric mixer until creamy. Add egg, beat until combined. Stir in nuts and flour.
2.Preheat the oven hot, 220°C (200°C fan-forced). Cut the pastry sheets in half; place on two greased oven trays. Spread the nut mixture thinly over the pastry pieces, leaving a 2cm border.
3.Halve the fruit and remove the seeds; slice the fruit thinly.
4.Arrange the fruit, overlapping slightly, on the nut mixture. Bake in a hot oven for about 15 to 20 minutes or until browned and pastry is cooked underneath.
5.Brush the fruit with the jam.
