Method

1.Melt butter in a large frying pan over a high heat. Add mushrooms; cook, stirring occasionally, for 8 minutes or until golden. Stir in ham and spinach; cook for 30 seconds or until spinach just starts to wilt. Season. Transfer to a heatproof bowl.
2.Squeeze juice and seeds from cut tomatoes; discard. Add tomato flesh to mushroom mixture; stir to combine. Season.
3.Spray a 4-hole (2-tablespoon) sausage roll maker with oil. Whisk eggs in a medium bowl until combined.
4.Fill each hole with 1 tablespoon of the egg; top each with ⅓ cup mushroom mixture and 2 teaspoons cheese. Turn machine on. Close lid; cook for 6 minutes or until puffed and golden. Turn machine off; lift the lid, stand for 1 minute. Transfer to a tray; cover to keep warm.
5.Repeat step 4 with remaining egg, mushroom mixture and cheese to make 8 omelettes in total.

These omelettes can be served hot or cold; they are ideal for kid’s lunchboxes and make great after-school snacks.
