Ingredients

Muesli slice
  • 125 gram butter, coarsely chopped
  • 1/3 cup (75 grams) firmly packed light brown sugar
  • 2 tablespoon honey
  • 1 1/3 cup (120 grams) rolled oats
  • 1/2 cup (40 grams) shredded coconut
  • 1/2 cup (75 grams) self-raising flour
  • 1/2 cup (65 grams) dried cranberries
  • 1/2 cup (80 grams) finely chopped dried pineapple
  • 1/2 cup (70 grams) slivered almonds
  • 2 tablespoon pepitas

Method

Muesli slice

    Preheat oven to 180°C. Grease 20cm x 30cm rectangular pan; line base and long sides with baking paper, extending paper 5cm over sides.

    In a medium saucepan, stir butter, sugar and honey over low heat until sugar dissolves; stir in remaining ingredients. Press mixture firmly into pan.

    Bake about 20 minutes. Cool slice in pan before cutting.

Notes

If you can't find dried pineapple you can use the same amount of finely chopped dried apricot instead.
